Unicorn Cupcakes

Unicorn Cupcakes bring a touch of magic to any event with their vibrant colors and whimsical charm. Perfect for birthdays, parties, or as a delightful surprise for any unicorn lover, these cupcakes combine the classic flavors of vanilla or chocolate with a splash of colorful frosting and festive sprinkles.

  • 24 cooled vanilla or chocolate cupcakes
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 teaspoon salt
  • 1 tablespoon vanilla extract
  • 2-3 tablespoons heavy whipping cream
  • Pink, blue, and purple food coloring
  • Sprinkles for filling and decoration

  1. Make Frosting:
    • In a mixing bowl, beat the butter until creamy. Gradually add powdered sugar, one cup at a time, mixing well after each addition. Stir in the salt and vanilla extract.
    • Gradually incorporate 2 tablespoons of heavy whipping cream, adjusting the consistency with more cream if necessary, until the frosting is smooth and spreadable.
    • Divide the frosting into three separate bowls. Color each portion with one of the food colorings—pink, blue, and purple—to create vibrant hues.
  2. Prepare the Frosting for Piping:
    • Spread a piece of plastic wrap on a flat surface. Place one color of frosting in the center and roll it into a log, removing any air bubbles and twisting the ends to seal. Repeat this process for the other two colors.
    • Snip off one tip from each plastic log. Place all three colored frosting logs, cut side down, into a pastry bag fitted with a 1M tip. This setup will allow the colors to merge beautifully when piped.
  3. Fill and Decorate Cupcakes:
    • Using a small knife or cupcake corer, cut a small hole in the center of each cupcake. Remove a piece of the cake and fill the cavity with sprinkles. Replace the piece of cupcake.
    • Pipe the frosting onto the cupcakes, starting from the outer edge and swirling towards the center to create a multi-colored swirl.
    • Garnish the frosted cupcakes with additional sprinkles for an extra touch of whimsy.

  • Ingredient Temperature: Ensure that all ingredients, particularly the butter and cream, are at room temperature to achieve a smoother frosting and easier piping.
  • Plastic Wrap Technique: Using plastic wrap to combine different colors of frosting helps maintain distinct colors and simplifies the piping process, ensuring each cupcake has a beautiful swirl of unicorn colors.
  • Storage: Store the frosted cupcakes in an airtight container in the refrigerator. They will stay fresh for up to 4 days, making them perfect for preparing in advance of an event.

Unicorn Cupcakes are not just a treat to eat but a feast for the eyes, guaranteed to bring joy and a bit of magic to any gathering. Whether you’re celebrating a special occasion or simply bringing a smile to someone’s face, these cupcakes are sure to enchant and delight everyone who sees and tastes them.
